Critical violations: Kitchen refrigerator found with raw whole shelled egg next to sliced green pepper, creating a cross contamination hazard.
Operator was unable to quikly locate a metal stem probe thermometer. Several products were being reheated and hot held at the time (thermometer found and education provided).
In cookline refrigeration, approximately 4 pounds of shredded pork found at 105.7 degrees in deep bowl (corrected - pork transfered into smaller shallow pans and refrigerated uncovered near the air blast zone of cooler).
At customer service counter, approximately 1 pound of deli sliced ham at 71 degrees in makeshift coldhold with melted ice (corrected - voluntarily discarded).
At kitchen prep table, 2 pounds of deli sliced ham still in commercial packaging at 50.7 degrees (corrected - ham was returned to refrigeration. At customer service line, cooked scrambled egg product at 70 degrees (corrected - voluntarily discarded).
In kitchen, approximately 20 raw whole shelled eggs on counter found at 70 degrees (corrected - eggs voluntarily discarded). At sandwich prep station, approximately 35 ounces of mayonnaise at 73 degrees (corrected - mayonnaise voluntarily discarded).
Violations: Refrigerators lack thermometers.
Employees eating in food preparation area. Personal items present in prep spaces.
Wet wiping cloths not stored in sanitizer solution, found on counter/prep surfaces.
Ladies restroom lacks towels or drying device (corrected).
